PRETTY HORSE began as a conversation between friends: late nights filled with elaborate cooking experiments for simple dishes, wandering stories, bumping music, and far-reaching discussions about food.  We shared an obsession with flavor, texture, and the necessary elements to make food feel alive.  Conversations became dreams, became goals, became recipes.

Last summer, we decided to execute on a vision, selling HOMEMADE KALE CHICKEN CAESAR WRAPS & FIZZY LEMONADE at the local farmers market.  The wraps smacked.  The music bumped. The lines were long and y’all were really patient: thank you, thank you, thank you!  By the end of the summer, we were exhausted, exhilarated, and onto something.

After a sold-out first season, we paused to reflect: what made PRETTY HORSE feel alive?

The answer was easy: the people.  All the people that came to help us out, hang out with us, bask in the weekend sun, enjoy our food, make new friends in line.  Y’all were the driving force of our whole operation.  What would allow us to keep honoring the people?

We spent the holidays reflecting, imagining, and building.  Now, PRETTY HORSE is back as a worker cooperative.  There are six of us... and counting.  All of us who work own an equal stake in the company, and all owners must work.   We put in the hours so that we can keep sharing food, sharing life, with you all.
